Well, we’ve had a bit of a cold snap here… Which, in middle TN just means that it stayed under 75F for a couple of days. Really, it was pretty chilly at the market yesterday (for September…).
This, of course, means that everyone starts dreaming of autumn: shorter days, denim jackets, falling leaves of all colors, and, probably pumpkin. Suddenly, Pinterest is highjacked by pumpkin pies, pumpkin pancakes, pumpkin spice lattes, and endless ideas for pumpkin cupcakes.
So, today I will follow along, and give y’all another family recipe. Trust me… It’s amazing. 🙂
- 4 eggs
- 3 c sugar
- 1 c vegetable oil
- 2/3 c water
- 3 1/2 c flour
- 2 t soda
- 1 1/2 t salt
- 1 t cinnamon
- 1 t nutmeg
- 2 c pumpkin
Mix together. Pour in greased loaf pans. Makes 2 standard loaves. Bake at 350F for 55 minutes, or about 40 minutes for smaller loaves.
We love to eat this with cream cheese for breakfast! It’s delicious. I may need to make this ASAP…
