Hey, y’all! Here’s a super-easy, last-minute sweet treat that my little brother came up with the other day. And now, having discovered such delightfulness, he will randomly show up, spoons-in-hand, and share some pudding with me. 🙂 Gotta love him.
Coconut Chocolate Pudding
- Coconut Milk
- Cocoa Powder (to taste)
- Sugar (to taste)
No joke, y’all. Just add them all together in a bowl, and whisk/tweak until you’re happy with the balance of sweet and chocolate. It’s thick, chocolatey, coconut-y, and oh-so-good!
Luke recommends using a clear bowl, so you can double-check to make sure you’ve incorporated all the cocoa powder.
For a lower-carb version, simply reduce or eliminate the sugar.
Plus, this just happens to be dairy free, egg free, gluten free, etc. It’s very allergy-friendly, without even meaning to be!
