Fresh Peach Pie

This is one of our most-looked-forward-to highlights of summer every year… Which is surprising, since we’re really not a “Jell-O” kind of a family. But, trust me, this is SO GOOD!

I found this while snooping around on Pinterest… I believe it is a Jose Villa photograph.

Originally, this was done with fresh strawberries. As good as that might be, it has now been glorified by using peaches instead! 🙂 Another AMAZING fruit to use is blackberries. We were astounded at how delicious that was when we first tried it.

With each substitution, simply find the Jell-O flavor best suited to that fruit. I think we usually use some sort of berry mix flavor (or maybe black raspberry???) for the blackberries…

So, without further ado:

Fresh Peach Pie

Use a pre-baked pie shell (we make our own. I’ll post a recipe soon!).

Peel and slice enough peaches to really fill the pie shell.

In a saucepan, bring to boil:

  • 1 c. water
  • 1 c. sugar
  • 3 T cornstarch

Add to this 3 T peach Jell-O, and let set to egg-white consistency.

Place your sliced peaches in the pie shell, and pour the Jell-O mixture over the peaches.

Chill well.

Top with lightly sweetened whipped cream. (Note: CoolWhip is NOT the same thing as whipped cream. Just sayin’. 🙂 )
