Zucchini is officially in season. So, whether you’re a CSA member with lots of zucchini in your basket, or a gardner wondering how in the world you’ll ever use all that stuff, this recipe is for you.
What’s more – this recipe works beautifully for those of us who may not be exactly crazy about zucchini. Just take my word for it… It’s amazing.
Preheat oven to 325 F.
- 3 eggs, beaten
- 1 cup oil
- 2 cups sugar
- 2 cups zucchini, grated
- 2 teaspoons vanilla
- 3 cups flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 cup nuts (optional)
Beat eggs. Add oil, sugar, zucchini, and vanilla.
Mix flour, soda, baking powder, cinnamon, and salt. Add to oil mixture, and blend well.
Bake in 2 loaf pans at 325 F for 1 hour.
