Today for lunch, I threw together some quesadillas. This is a great go-to meal (lunch or supper!) that’s simple, affordable, quick, and easy to multiply for crowds. Plus, there are so many awesome topping possibilities!

This time, I laid out several small tortillas, and topped them with the following:

  • Shredded Cheddar
  • Sautéed Onions and Peppers (left-over from another meal)
  • Sautéed Mushrooms (fresh from our “crop”!)
  • Steak – thinly sliced (left-over)

After placing a tortilla on the top of each quesadilla, I moved them to the skillet. Since we had garlic butter in the fridge (left-over from pizza night), I used this to fry them in. It smelled incredible! Not bad for a meal that is basically for cleaning out the refrigerator. 🙂

I served them with sour cream and salsa. It was so simple and delicious!

For a gluten free version, try GF wraps or even just corn tortillas. All the toppings are gluten-free friendly!
